Italian Meals For People Who Hate Red Sauce

If you're someone who hates red sauce, then you might cringe when Italian food is mentioned. Well, you don't have to. It's a misconception that all Italian meals are made with lots of tomatoes. There are lots of delicious Italian meals that don't involve a heavy tomato sauce.

Below is a list of some of the most popular Italian meals that are made without a heavy read sauce. You will find them at most restaurants.

Fettuccine Alfredo

This is a super popular dish. It's not light, so if you're on a diet, then you might want to skip this one.  However, if you are in the mood for a rich, indulgent dish, then this is a great pick. The sauce is made with butter, cream and Parmesan cheese.

If you're going to make this at home, do yourself a favor and make it fresh. It tastes much better than many bottled sauces. Also, skip the pre-grated Parmesan cheese that is sold in cardboard tubes. Buy a chunk of Parmesan and grate it yourself. It will make the dish taste much better.

Pumpkin Ravioli

This is a lighter dish then fettuccine Alfredo. If you like cheese ravioli, but want to try something a bit more exotic, then you should check this out. It's a great dish to get during the fall. The pumpkins are in harvest, and they bring a beautiful complexity to the dish.

This dish is not normally served with a tomato sauce. Instead, it is covered in a light butter sauce. The butter sauce is made by browning the butter and flavoring it with sage.

Pasta e Fagioli

If you're looking for a hearty soup, then check out pasta e fagioli or "pasta and beans".  This is a classic Italian dish that is healthy and filling. It is made with small shell pasta, cannelloni beans, carrots, celery onions and garlic. The broth does have tomato paste, but it is not overpowering.

This soup is great when served with a crusty bread.

Mushroom Risotto

Risotto is a rice dish. If you're not a fan of rice, don't immediately rule out risotto. Give it a chance. Unlike the rice you are used to eating, risotto is creamy and rich. It is made by sautéing Arborio rice and mushrooms in butter and diced onions. White wine is then added to the pan. When the wine has evaporated out, a broth is added to help the rice finish cooking.

When the dish is finished cooking, it is removed from the heat and a generous amount of Parmesan cheese is mixed in. This gives it that extra bit of creaminess.
